A white-fleshed sea fish found in European waters, John Dory (also known as St Peter's fish), is an odd-looking creature with an oval, flat body and a large, spiny head. The white, boneless, meaty flesh is firm and flavoursome and can be cooked in a variety of ways.

 

You can have the head off and the fins trimmed to cook it whole, or have it filleted. The average fish will produce two fillets, there will be a few small bones at the top of each fillet.

 

Please note that John Dory is priced at £2/100g, head on price. Each fish is different so the below weights and prices are indicitive, meaning their may be a small additional amount to pay on delivery.

 

If ordered whole, the fish will be delivered gutted, usually with the head on. If you would like the head removing please let us know in the notes section on the check-out page.
